2oz of chardonnay in cooking?

I use 2oz of chardonnay to cook about 3 servings of fish. Is that dangerous?  I would think the alcohol would all boil off.

I’ve always read that alcohol burns off when you cook with it. 

There have been some studies on this, and not all of the alcohol boils off.  But a lot of it does, and 2 oz for 3 people probably wouldn't adversely affect you anyway.

I wouldn't worry about that quantity either but I do think most of the alc. burns of. It's going to be rare for alcohol to be dangerous at a sip. If you're in shocking condition, I would definitely not risk it just for alcohol. I am so sure that's not dangerous for the vast majority of folk. Hope you enjoy it if you have it. Cooking is a great therapy I find.
