Hey buddies,

 

who wants to give me the best recipe for a nice salad in these superhot summer days?

I am from Germany and we are huge fans of "Grillen" (kind of barbeque but not with burgers - steaks and sausages..)

and nothing is better than a nice noddle salat added to it.

 

But I am sick of it.-)

Who gives me a better recipe? maybe from another country? I love avocado.. or I dont know - surprise me..

 

thanks and if you wanna get the bet recipe for my noodle salad - I could in exchange give it to you 8)

Google "columbia 1905 salad", there are several websites that have the recipe, I'm sure most of them are accessible over there.

Cucumber, Tomato & Avocado Salad

Ingredients

1 English cucumber, halved lengthwise & sliced

1/2 pint grape or cherry tomatoes, halved

3 avocados, peeled & diced

1/2 c. chopped cilantro

3 T. fresh lemon juice

1 1/2 T. fresh lime juice

2 or 3 tsp. honey {depending on your personal taste ... we like this with 3 tsp.}

1/2 tsp. salt

1/4 tsp. pepper

I love the Columbia  :thumbsup:

 

I've been to the one in St. Augustine, the one in Kissimmee and the original in Ybor. Almost always get the salad but the ropa vieja is good as well. And the bread....man oh man that's some good Cuban bread....

Oh this sounds so delicious!!! Sadly my mast cells/allgergicwhatever symptoms are on 100% at the moment and I have to avoid avocado..But I have printed that one out and will enjoy it when that stuff is over.. thank you!!

Have found this one:

 

1905 salad..

 

 

Ingredients

 

4 cups Iceberg Lettuce, chopped into 2 inch pieces (about 1/2 large head of lettuce)

1 large Tomato, cut into about 10 - 12 slices (lengthwise)

1/2 cup baked Ham, julienned (can use turkey or shrimp)

1/2 cup Swiss cheese, julienned

1/2 cup Pimiento-stuffed Green Spanish Olives, left whole

1/2 cup Romano/Parmesan cheese, grated

2 tablespoons Worcestershire Sauce

Juice of 1 Lemon

“1905” Dressing

For the "1905" Dressing:

 

1/2 cup extra-virgin Spanish Olive Oil

4 Garlic Cloves, minced

2 teaspoons dried Oregano

⅛ cup White Wine Vinegar

Salt and pepper to taste

Marigolds Salad

 

(It all depends on the question how big is a vegetable where you live or which ingredient do you want to have most of.

Normally we have as much vegetable in this salad as meat sausages peaces)

 

300 g - 500 g cooked and chilled noodles (with or without gluten, you can decide), I prefer the italian ones called "penne"

1 - 2 big peppers

glas of pickled gherkins (sweet-Spicy)

1 tin of sweet corn

3 spring onions (or more)

optional: peas (out of a tin, or cooked and chilled)

150 g meat sausage (chicken, not pork)

chopped chives

 

All ingredients except the noodles should be cut into small peaces - so that you are able to get all ingredients into your mouth with one spoon:-)

 

Dressing:

3 spoons native Olive Oil

1,5 Spoons rice vinegar (or other vinegar that is mild)

Sea salt 1-2 tea spoons

1 spoon mustard (now here comes the best: either choose sweet mustard OR french mustard OR grainy mustard)

If you are able to hold that salad cool and not put it into the bright sun, you can also add some mayonnaise:-)

 

Its the best to let the salad untouched for 2-6 hours in the cooler and then.. enjoy..

My eating is very restricted atm but one I used to like is:

 

Caramelise some red onion cut as rings by baking the in the oven with olive oil.

 

Rip up some little or sweet gem lettuce leaves.

 

Mix lettuce with caramelised onion, walnut pieces and drizzle with a little walnut oil.

 

Mix it all together.

 

Top with Parmesan shavings (or hard goats cheese if you can’t do cow dairy).

My favorite salad of all time is German potato salad. Not really a "summer" salad but man, it's tasty.

 

Wish I could find a good recipe for artichoke salad. My mom bought some pre-made in a jar one time and I loved it but I can't find it anymore and the recipes I have tried to make weren't as good.

Yeah! And every county has its own recipe for german potato salad. some are with bacon, others with cucumber.. and all are very delicious.

Of course mine is the best..  ::)

 

And yes - we normally eat healthy in comparison to other countries but when its time to put meat over a fire, we have these heavy salads on top.

And a nice desert after it. Thats why you can not make a diet in summer 8)

Now something more healthy:-))

 

fennel salad

 

chop this:

 

1-2 fennel (chopped in thin slices)

1 pepper red

1 cup of Walnut kennels

1/2 cup of chive

Salt

Pepper if you want

 

2 Spoons Olive Oil

1 Spoon Vinegar

 

Leave it in the cooler for 2 hours before serving!

I made my yummy warm green bean and tomato salad I haven’t had for months last night.

 

Cook some French/Fine beans.

 

Hope about the same amount of tomatoes as beans in to small pieces.

 

Finely chop some red onion - about quarter of amount of tomatoes.

 

Put tomatoes and onion in a bowl.

 

I add Olive oil, balsamic vinegar, Dijon mustard, sea salt and black pepper, but you could use any dressing you like - maybe oil and lemon juice is can’t tolerate other stuff atm - mix it all up with the tomatoes and onion.

 

Add the cooked beans while still warm and mix it all together.
